Ending the Year of 2010 - Coaches Request

I have coached a number of people this year and am conscious that at this time of the year we are busy...and I mean very busy.

Interestingly it will soon be time to review the year that has been.To stop and literally take stock of where you have been and what worked, what didn't work and where to next..Allot f people seem to miss this part of the completion process for the year and end up charging off into the new year without stopping..I believe it is important to set aside some time to do this work of reflection, review and completion.

Here are some suggestions that may be of some use to you..

Take the 21 of December off with no commitments at all,  its the Winter Soltice, yes the whole day is for you...

Ensure you get some time off after Christmas Day and Boxing days, take a day a two where there is nothing planned and allow yourself to relax and recharge yourself before the new year.

Easy Recipe for Peanut Butter Soba Noodles

I am passing this on as a snack food, its simple,quick and yummy.





This yummy dish is SO easy to prepare! The sauce is super healthy, with peanut butter protein, naturally sweet honey, warming ginger and good -for- your- immunity garlic. Soba noodles are a nice healthy variation to a noodle.

Prep and Cook Time: Prep and cooking time: 15 minutes

Ingredients:

• 1/4 lb Soba noodles

• 1/2 cup minced scallion

Sauce -

• 2 TBS peanut butter

• 2 TBS rice vinegar

• 11/2 TBS soy sauce

• 1 TBS honey

• 2 medium cloves garlic, chopped

• 21/2 TBS minced or grated fresh ginger

• 2 TBS water

• pinch cayenne to taste

• Salt and white pepper to taste

Directions:

1. Bring lightly salted water to a boil and cook soba noodles according to

package instructions.

2. While water is coming to a boil, blend sauce ingredients together in a

blender and minced scallion.

3. Drain noodles, and toss with sauce and scallion.

Serves 4 as side dish
