Recipe From My New Ebook

Hi,
I wanted to share a recipe from my "Sinless Sweet Treats:Sugar, Dairy and Wheat Free Recipes" ebook soon to be released.

Hit The Wall Cookies (great for kids)
  • 2/3 cup finely chopped walnuts
  • ½ cup finely chopped dates
  • 3 medium bananas mashed
  • 2 cups rolled oats
  • ½ cup sunflower oil
  • 1 teaspoon vanilla essence

Method:
  1. Mix all the ingredients and spoon them onto baking paper.
  2. Flatten with a fork (can mark them two ways so you get a crossing pattern on the top.)
  3. Bake for 20 minutes at 200C.
  4. Cool on a wire rack.
  5. Serve.

Tasting Notes: These cookies are great for children, not only are they so easy to make the children can join in too.The taste is excellent, firm on the outside and them chewy in the centre.Delcious and great as a portable snack!

Banana Kumara Muffins


No grains, no diary, no sugar and they taste amazing. This is the perfect recipe to make plenty of. Theses are a great snack, has protein, good carbohydrates and fats. Not sure how long they will keep, but can’t imagine them lasting to long.



Ingredients
  • 2 large kumara (sweet potatoes)
  • 3 bananas
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup crushed almonds or walnuts
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1 tablespoon rice syrup/maple syrup
  • 1 table spoon coconut oil
  • 1 cup of coconut flour/almond flour
  • 2 eggs
Cooking Instructions
  1. Heat oven to 200 degrees
  2. Remove skin from kumara and cook.
  3. With a whiz blend up kumara and bananas until smooth.
  4. Add all other ingredients and mix together.
  5. Pour mix into muffin tins about 3/4 full and place in oven for around 15 minutes, until a skewer comes out clean and they are golden on top.
  6. Serve with butter or coconut cream!

Love Letter to My Body..

This is a Love Letter to My Body.

I hope this letter speaks to your heart and you get to feel (and see) the changes that have been made in my own and others lives and be inspired to make changes of your one.


Dear Body,

I have realized it is time. I have finally made a decision to make some changes and begin to embrace you, my body as my friend and co-travellor in this journey of life. To see you as my companion if you will. For some time now I have remained silent, becoming ever more conscious of the fact that I have been at war with you. I have punished you harshly, deprived you and scolded you unfairly. I have also begun to see that there is another, a more simple way to move into harmony with myself, to make the peace I have longed for and allow it into my life. This internal change has now been moved into the everyday world where I can see practically that I can live in harmony with myself and nature at at last bring the balance I am seeking.

"Radiant You" To me these word brings forward the qualities of both FUN, EASE and RADIANCE, this is not about denial or being boring. These were the qualities I wanted to focus more on in my life. As a woman I work hard. I give my time freely to my family and friends, often when it comes to me and my needs the tank is empty. Too many times, I miss out completely, mainly as a result from the choices I make for myself. So I have decided, thats it, theres the line in the sand. I am closing the door on this way of living. I want a richness in life, a life that feeds the feminine aspect of me, a life that feeds my mind, body and spirit.In short, a life that nurtures me which then brings my best to offer life, my family, friends and most importantly, MYSELF.



All through this I have wanted to say, I Love You, I Want to Be Your Friend and Chief Supporter in my life. The struggle and the war are finished. I want to thank you for being there for me, and keeping going when it looked a rocky road ahead..Lets sit in the sun and relax for a while together. Phew what a relief!



I saw this journey with my female friends. So I created an online virtual fully supported program called "Radiant You, The Smart Woman's Guide to Weightloss, Balance and Self – Care" program.
